By default, there is no penalty for an unattempted activity with no due date set. You can change the default setting to score these activities as zero when the course ends.
If you change the default setting, activities with no due date will be scored as zero if the student has not attempted them by the time the course ends. Students' final scores will be recalculated and can be negatively affected.

your name > Course Settings > Gradebook Settings.
- To score unattempted activities with no due date as zero, select Score all unattempted assignments without a due date as zero when course end date is reached.
